Catching Up
I know, it's been a while (Cara), but I've got lots to share.
The first week of May marked my one year anniversary of being a vegetarian. To celebrate, I re-read The Omnivore's Dilemma by Michael Pollan. This was the book that convinced me to take the plunge and go veggie. I don't talk about this much, but it has significantly improved my life (in GI terms). I have struggled with GI problems since early high school, but I must say I have felt better this year than at any other time in my life.
When I took the plunge, I resigned myself to thinking I would just have a limited repoirtoire of foods I would eat. But, being a vegetarian for me has made me a more conscientious eater and a more adventurous eater. I'll try anything (see radishes below) now. And since you have to be concerned with getting all that your body needs, I have become much more aware of what I eat and what I need.
Ok, that's enough. On to more exciting news...
Colin and I joined a CSA this summer. We are a part of the Avalon Acres CSA. We split 1/2 bushel of produce every week with the Wares. I love it! Seriously. We discussed it and decided that we would try everything in the box at least once. It's only been 3 weeks but here are some lessons I have learned
- I don't like radishes. No two ways about it. I've tried, but I don't like them. The End.
- Roasting vegetables is the way to go. I've roasted radishes, kohlrabi, cauliflower. Yum.
- I like green onions, but am running out of ways to cook them.
- I get really excited about produce. I know, I'm weird, but I feel like I'm getting a present every week.
- There are many ways to enjoy a salad. Yum. Even with radishes.
Below are pictures of our produce from the first 3 weeks. (Side note: I had to do seperate posts for the pics b/c blogger was being difficult.)
Also, Allison suggested a website to me: 101cookbooks.com. It is changing my life as we speak. Seriously. The author is a veggie and cooks all natural. I'm sure you carnivores out there can figure out how to incorporate meat. I made this recipe for cauliflower last night and it was delish! Thanks, Allison!
CSA Week 1 - The Amish farmers
made the cinnamon rolls, not me! This week we enjoyed:
Lots of salad, potato and scallion soup, strawberry muffins

scallions: Grill them add some seasoned salt while grilling, add fresh lime juice before eating. YUM!
how were the cinnamon rolls? I'm thinking about getting some this week.
Grilled scallions? i can't imagine.
